Sweet Turkey Chili

There’s nothing like digging out a card from your mom’s decades-old recipe box or finding your Grandma’s famous peanut butter cookie recipe amongst a stack of forgotten items. Just the mere thought of recreating one of these special dishes can bring back a flood of good memories.

Don’t get me wrong, I cherish traditions, but when it comes to cooking, I like to spice things up a bit…or in this case, sweeten things up a bit. Cooking ‘by the books’ goes out the window as soon as I get my hands a recipe. Keep reading to find out how I’ve added my own personal flare to an otherwise simple dish. 

Ingredients (serves 2)

  • 8 ounces lean ground turkey
  • 1½ TBSP chili powder
  • 1½ TBSP cocoa powder
  • 4 garlic cloves, minced (or 1 TBSP garlic powder if you’re in a pinch)
  • ½ cup chopped onion
  • 15-ounce can pinto or black beans (or 1 8-ounce can of each)
  • 1 cup low sodium chicken stock

If you like your chili a bit thicker:

  • 3 TBSP milk
  • 1 TBSP cornstarch

For topping:

  • ½ cup pico de gallo
  • 4 TBSP cup light sour cream 
  • Fresh lime juice

Directions

  1. Using a zero-calorie cooking spray, lightly coat a medium pan (use a large pan if doubling the recipe.) Cook turkey over medium heat until no pink remains. 
  2. Add chili powder, cocoa powder, garlic, and onion and mix until combined. 
  3. If you like thicker chili, drain your beans before adding them to the pan. Then, add the chicken stock. 
  4. Reduce heat to low and let simmer for at least 10 minutes. If, after 10 minutes, chili is not thick enough, combine milk and cornstarch in a separate bowl. Whisk until no clumps remain, then pour into chili. Stir gently until mixture is well incorporated. 
  5. Top chili with pico de gallo, sour cream, and lime juice to taste. 
  6. If you like a bit of crunch, top with some crushed corn chips.

  • Protein: 37g
  • Carbs: 58g
  • Fat: 14g
