DIY Chipotle Bowls

Who doesn’t love fast food? If not for the comfort, at least for the ease. I get it. Fast food is… well…fast. On days when time is of the essence, you deserve something quick. I am right there with you, which is why I have created my own fast food burrito bowl. It’s the same great taste with half the fat and 20g more protein. This recipe is perfect for days you’re craving fast food, but not the guilt. 

Ingredients (Serves 4)

  • 4 cups cooked Jasmine rice (about 1⅓ cups dry)
  • 2 8-oz chicken breasts
  • taco seasoning to taste
  • 1 medium-large tomato
  • 4 cups lettuce
  • 2 avocados
  • 15.5-ounce can pinto beans
  • 8 cloves garlic
  • ½ cup light sour cream

For Mango Salsa:

  • 1 ripe mango, peeled and chopped
  • ¼ red onion, diced
  • 1 lime, zested and juiced
  • cilantro to taste

Directions

  1. Begin with your rice. Follow the directions on the box for best cook results. Don’t forget to set a timer! **Jasmine rice is typically a 1:1¾ rice to water ratio, cooked for 20-25 minutes.
  2. While rice is cooking, halve chicken breasts crosswise and rub with taco seasoning. Cook in a pan sprayed with 0-calorie cooking spray over medium heat. **For juicy chicken, cover while cooking, flip the chicken when edges start to turn white, and cook to 165° F. 
  3. While chicken is cooking, prepare the mango salsa. Combine mango, onion, lime (both zest and juice) and cilantro. Shake or stir and set aside. 
  4. Chop the tomato, lettuce, and avocado; set aside. Check the chicken; it may be time to flip! If your rice is done, leave covered and remove from heat.
  5. As your chicken finishes, drain the pinto beans and mince the garlic. After coating a pan with cooking spray, add the garlic and cook over medium until it starts to brown. Remove from heat and set aside.
  6. Line your dish with a bed of rice, followed by lettuce. Place 4 ounces of chicken on each plate, followed by mango salsa, tomatoes, pinto beans, and garlic. Top with avocado and sour cream.

Per Serving:

  • Calories: 695 (vs 800)
  • Protein: 49g (vs 32g)
  • Carbs: 79g (vs 76)
  • Fat: 19g (vs 40g)

Modifications

Need Less Fat? Remember that fat isn’t’ bad for you. However, if you are counting calories and tracking macros and you still need less fat, try using ¼ avocado per serving rather than ½. This will bring your fat down to 13g total. 

Change The Base: If white rice isn’t your thing or if you’re trying to incorporate more whole grains into your diet, try using brown rice. If you need fewer carbs or calories, cauliflower rice is another great option. Just remember, any butter or oils you add will add calories and fat too!

Spice Things Up: If you want a bit more zing, add your favorite taco sauce or hot sauce over the top! A mixture of sour cream and hot sauce is a quick and easy way to make a delicious crema for topping!

Why I Love This Recipe

I make this recipe on Sunday nights and enjoy it over the following few days. I season, cook, and chop my chicken then store it in an airtight container. The mango salsa keeps nicely and, if I’m being honest, tastes even better the next day when it’s had time to sit. I cook my rice, drain my beans, and chop my veggies all in advance. The only things I don’t do ahead of time are spoon my sour cream and chop my avocado. I love this recipe because I only need to prep my ingredients once and I’m set for multiple meals. It’s packed with flavor, a huge time saver, and it doesn’t get much better than that!
