Homemade Coffee Rub
Use this rub over steak, chicken, tuna, or any other of your favorite proteins!
Ingredients
- 2 tbsp coarse salt
- 2 tbsp coffee grounds
- 2 tbsp garlic powder
- 2 tbsp smoked paprika
- 1 tbsp lemon pepper
- 1 tbsp onion pepper
- 1 tsp chili powder
- ½ tsp cayenne pepper
Mix ingredients in a small bowl until well blended.
Coffee-Rubbed Chicken
Ingredients (Per 1 Serving)
- 4 oz boneless skinless chicken breast (thawed)
- 1 cup cooked jasmine white rice
- 2 tbsp sour cream
- Homemade coffee rub (see above) **there will be enough rub for at least 4 servings of this recipe.
- Green onions for topping

Directions:
1. Follow the specific directions on the box of rice for best results. The rice will take the longest, typically about 20 minutes, so start with this.
2. While rice is cooking, halve each chicken breast into 2 cutlets. Use a meat mallet to produce an uniform thickness throughout each cut.
3. Spray a medium skillet with a zero calorie cooking spray and heat over medium heat.
4. Cover each cutlet with homemade coffee rub until well-coated. Gently rub in.
5. Cook chicken in skillet until internal temperature reaches 165°F. For juicier chicken, cover the skillet while cooking, and flip chicken over every three minutes. When cooked, remove from heat and set aside. Keep covered.
6. When rice is finished cooking, measure 1 cup onto your plate. Place chicken over the rice, and top with sour cream and green onions.
